Ingredients
  

  • 1.5 kg approximately 3.3 lbs chicken wings, patted dry and separated into drumettes and flats
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 150 g ½ cup runny honey
  • 60 ml ¼ cup sriracha sauce (adjust to taste for heat)
  • 60 ml ¼ cup soy sauce (light or all-purpose)
  • 30 ml 2 tablespoons rice vinegar
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • Juice of 1 lime
  • 1 tablespoon cornflour cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 spring onions scallions, thinly sliced, for garnish
  • 1 tablespoon sesame seeds toasted, for garnish

Method
 

  1. Prepare the Chicken: Preheat your oven to 200°C (180°C fan/Gas Mark 6). Pat the chicken wings thoroughly dry with kitchen paper. This is a crucial step for achieving crispy skin. In a large bowl, toss the dried chicken wings with the olive oil, salt, and black pepper until evenly coated.
  2. Bake for Crispiness: Arrange the seasoned chicken wings in a single layer on a large baking tray lined with baking parchment, ensuring they are not touching. Roast in the preheated oven for 25-30 minutes, flipping them halfway through. You’ll know they're ready when they’ve turned a beautiful golden-brown colour and their skin begins to crisp up and render some fat, filling your kitchen with a savoury aroma.
  3. Prepare the Sriracha Honey Glaze: While the wings are roasting, combine the honey, sriracha, soy sauce, rice vinegar, minced garlic, grated ginger, and lime juice in a medium saucepan. Whisk everything together until well combined.
  4. Simmer the Sauce: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Once simmering, reduce the heat to low and let it cook for about 5 minutes. The sauce will darken slightly and thicken a little, releasing a fragrant, sweet, and spicy steam.
  5. Thicken the Glaze: Whisk the cornflour slurry (cornflour mixed with cold water) into the simmering sauce. Continue to stir constantly for another 1-2 minutes until the sauce visibly thickens to a glossy, syrupy consistency, coating the back of a spoon without running off too quickly. The sauce will transform into a rich, deep amber hue. Remove from heat.
  6. Glaze the Wings: Once the chicken wings are roasted and crispy, carefully remove them from the oven. Transfer the hot wings directly into the saucepan with the prepared honey sriracha glaze. Toss gently with tongs until every wing is thoroughly coated in the sticky, glistening sauce. The wings will absorb the warm glaze, taking on an enticing sheen.
  7. Final Caramelisation (Optional but Recommended): For an extra sticky and caramelised finish, return the glazed wings to the baking tray and place them under a hot grill (broiler) for 2-3 minutes, watching them carefully. They should develop a deeper, slightly charred colour, and the sauce will bubble and caramelise further, intensifying the stickiness.
  8. Serve and Garnish: Transfer the Sticky Honey Sriracha Chicken Wings to a serving platter. Garnish generously with thinly sliced spring onions and toasted sesame seeds. Serve immediately while hot and sticky, ready for everyone to dig in!
