Ingredients
  

  • 12 large fresh jalapeño peppers about 350g
  • 200 g cream cheese softened to room temperature
  • 100 g mature cheddar cheese finely grated
  • 50 g mozzarella cheese grated
  • 2 tablespoons plain flour
  • 1 large egg lightly beaten
  • 100 g panko breadcrumbs or regular breadcrumbs
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional, for extra heat
  • Salt and freshly ground black pepper to taste
  • Vegetable oil for frying (about 500ml, or use a spray oil for baking)

Method
 

  1. Prepare the jalapeños: Slice each jalapeño in half lengthwise. Using a small spoon or a paring knife, carefully scrape out the seeds and white membranes. Your fingers should feel the slight tackiness of the inner flesh, and you’ll see the pale, spongy pith separate easily. Rinse the halves under cold water and pat them thoroughly dry with kitchen paper — any moisture will prevent the filling from sticking.
  2. Make the cheese filling: In a medium mixing bowl, combine the softened cream cheese, grated cheddar, grated mozzarella, smoked paprika, garlic powder, onion powder, cayenne (if using), and a pinch of salt and pepper. Stir vigorously with a wooden spoon until the mixture is completely unified and smooth. The colour should be a warm, pale orange, and the texture will be thick and spreadable, like a soft dough.
  3. Stuff the jalapeños: Using a small spoon or your fingers, carefully fill each jalapeño half with the cheese mixture, mounding it slightly above the cut edge. You’ll see the filling sit proudly against the green skin, creating a little dome that will hold its shape during cooking. Set the stuffed halves on a tray.
  4. Set up the breading station: Place the flour in a shallow bowl, the beaten egg in another, and the panko breadcrumbs in a third. Working with one stuffed jalapeño at a time, gently coat the cheese side in flour, tapping off any excess. The flour should form a thin, even dusting that feels slightly powdery. Then dip it into the egg, letting any excess drip back into the bowl. Finally, press it into the breadcrumbs, ensuring the cheese is fully covered. The breadcrumbs should cling in a thick, sandy layer that feels dry to the touch.
  5. Chill the coated jalapeños: Place the breaded jalapeños on a plate and refrigerate, uncovered, for 15 minutes. This step is crucial — the cold helps the breading adhere firmly, preventing it from slipping off during frying.
  6. Fry the jalapeños: Heat the vegetable oil in a large frying pan or deep skillet over medium-high heat until it reaches 175°C (350°F). You can test this by dropping a breadcrumb into the oil — it should sizzle immediately and rise to the surface. Carefully lower 4-5 jalapeños into the hot oil, cheese-side down first, using tongs. Fry for 2-3 minutes, until the underside is deep golden brown and crisp. You’ll hear a steady, gentle sizzling, and the breadcrumbs will darken to a rich amber colour. Flip them over and fry for another 1-2 minutes, until the skin is lightly blistered and the cheese is bubbling at the edges. The jalapeño skin will soften slightly and develop a few dark spots, while the cheese inside should be molten and oozing.
  7. Drain and serve: Remove the fried jalapeños with a slotted spoon and transfer them to a plate lined with kitchen paper. You’ll see the paper absorb the excess oil, and the jalapeños will steam gently as they cool. Let them rest for 2 minutes before serving — this allows the filling to set just enough so it doesn't run out when bitten into.

Notes

For a milder version, omit the cayenne pepper. Baking option: spray with oil and bake at 200°C for 15-18 minutes, flipping halfway.
