Ingredients

  • 1.5 kg bone-in skin-on chicken pieces (thighs and drumsticks work wonderfully)
  • 2-3 Scotch bonnet chillies deseeded and finely chopped for less heat, leave seeds for more
  • 1 large onion roughly chopped
  • 6 spring onions roughly chopped
  • 4 cloves garlic peeled
  • 5 cm fresh ginger peeled and roughly chopped
  • 2 tbsp allspice berries lightly crushed, or 1 tbsp ground allspice
  • 1 tbsp dried thyme
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp dark brown sugar
  • 2 tbsp soy sauce ensure it's halal certified if required
  • 2 tbsp apple cider vinegar
  • 1 tbsp vegetable oil
  • Salt and freshly ground black pepper to taste
  • 400 g tin kidney beans rinsed and drained
  • 250 g long-grain rice
  • 400 ml coconut milk
  • 250 ml vegetable stock
  • Fresh coriander for garnish

Method

  1. Prepare the Chicken: Start by patting your chicken pieces dry with kitchen paper. This helps the marinade adhere better. Make 2-3 deep slashes into each piece of chicken with a sharp knife; this allows the flavours to penetrate deeply into the meat. Place the chicken in a large, non-reactive mixing bowl.
  2. Make the Jerk Marinade: In a food processor or blender, combine the chopped Scotch bonnet chillies, onion, spring onions, garlic, ginger, allspice, dried thyme, cinnamon, nutmeg, dark brown sugar, soy sauce, apple cider vinegar, vegetable oil, salt, and black pepper. Blend until you have a relatively smooth, vibrant green paste. The aroma will be wonderfully pungent and spicy at this stage, a true indicator of the flavours to come.
  3. Marinate the Chicken: Pour the entire marinade over the chicken pieces in the bowl. Using your hands (gloves are advisable due to the chillies!), thoroughly massage the marinade into every part of the chicken, ensuring it gets into those slashes. Cover the bowl and refrigerate for a minimum of 4 hours, or ideally overnight, to allow the chicken to absorb all the incredible flavours. You'll notice the chicken taking on a beautiful, earthy brown-green hue from the spices.
  4. Cook the Jerk Chicken: Preheat your oven to 200°C (180°C fan/Gas Mark 6). Line a large baking tray with foil for easier cleanup. Arrange the marinated chicken pieces in a single layer on the prepared tray. Roast for 30 minutes. After 30 minutes, flip the chicken pieces. The skin should be starting to caramelise and turn a deep, inviting brown with charred edges, releasing an intoxicating, spicy-sweet smell throughout your kitchen. Continue roasting for another 20-30 minutes, or until the chicken is cooked through, the juices run clear, and the internal temperature reaches 74°C. The surface will be beautifully dark and sticky.
  5. Prepare the Rice & Beans: While the chicken is roasting, heat a tablespoon of vegetable oil in a medium saucepan over a medium heat. Add a finely diced small onion and sauté until softened and translucent, about 5 minutes, filling your kitchen with a sweet, savoury scent. Add the rinsed long-grain rice and stir for 1-2 minutes until lightly toasted, taking on a slightly opaque appearance.
  6. Finish the Rice & Beans: Stir in the rinsed kidney beans, coconut milk, and vegetable stock. Bring the mixture to a gentle boil, then reduce the heat to low, cover the saucepan tightly, and simmer for 15-20 minutes, or until all the liquid has been absorbed and the rice is tender. The rice will be plump and creamy, with a subtle coconut aroma. Once cooked, remove from the heat and let it sit, covered, for 5 minutes before fluffing gently with a fork.

Notes

For best flavour, marinate the chicken overnight. Wear gloves when handling Scotch bonnet chillies. Adjust chilli quantity to your spice preference.
