Ingredients
  

  • 300 g dried egg noodles or ramen-style noodles
  • 400 g raw king prawns shrimp, peeled and deveined
  • 6 cloves garlic finely minced
  • 2 tablespoons fresh ginger grated
  • 4 tablespoons soy sauce
  • 2 tablespoons dark soy sauce for colour and depth
  • 2 tablespoons sambal oelek or chili garlic paste
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 spring onions scallions, sliced
  • 1 red chili thinly sliced (optional, for garnish)
  • 1 tablespoon toasted sesame seeds
  • Lime wedges to serve

Method
 

  1. Cook the noodles: Bring a large pot of salted water to a rolling boil. Add the noodles and cook according to the package directions, usually about 3 to 4 minutes. When they are tender but still have a slight bite (al dente), drain them in a colander and rinse briefly with cold water to stop the cooking process. You should see the noodles look glossy and separate easily.
  2. Prepare the sauce: While the noodles cook, whisk together the soy sauce, dark soy sauce, sambal oelek, honey, and sesame oil in a small bowl. The mixture should be a deep, dark amber colour and smell intensely of garlic and chili. Set it aside.
  3. Cook the aromatics: Heat the vegetable oil in a large frying pan over a medium-high flame. Add the minced garlic and grated ginger. You will hear a gentle sizzle as they hit the pan. Stir them constantly for about 30 seconds, until they become very fragrant and the garlic just begins to turn a pale golden colour. Do not let it burn, or the dish will taste bitter.
  4. Cook the shrimp: Add the raw prawns to the pan in a single layer. Let them cook undisturbed for 1 minute. You will see the bottoms turn pink and opaque. Flip them over and cook for another minute. The shrimp should curl slightly and feel firm to the touch. Immediately pour the prepared sauce over them. The sauce will bubble up rapidly, filling your kitchen with a sharp, savoury aroma.
  5. Combine noodles and sauce: Add the drained noodles directly to the pan with the shrimp and sauce. Using tongs or a pasta fork, toss everything together for about 1 to 2 minutes. The noodles will soak up the sauce, turning a beautiful, even brown colour. You should see the sauce reduce slightly and cling to each strand, leaving only a small amount of glossy liquid in the bottom of the pan.
  6. Finish and serve: Remove the pan from the heat. Sprinkle the sliced spring onions, red chili (if using), and toasted sesame seeds over the top. Give it one final gentle toss. Serve immediately with lime wedges on the side, so everyone can squeeze fresh juice over their portion just before eating.

Notes

Adjust the amount of sambal oelek to control spiciness. For best results, use raw king prawns and do not overcook the shrimp.
