Add the chicken chunks and toss well to coat. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavour.
- Grill the Chicken: Preheat your grill (broiler) to high. Thread the marinated chicken onto skewers (if using wooden ones, soak them in water for 30 minutes first) or arrange them in a single layer on a foil-lined baking tray. Grill for 10-12 minutes, turning once, until the chicken has dark, charred spots on the surface and is cooked through. Sensory cue: You will see the edges of the chicken darken and char, and you'll hear a gentle sizzle as the sugars in the marinade caramelise. - Bloom the Spices: Add the crushed garlic, grated ginger, green chillies (if using), and all the ground spices (cumin, coriander, garam masala, turmeric, paprika). Stir continuously for 1-2 minutes. Sensory cue: The mixture will become thick and paste-like. The spices will release their oils, creating a powerful, heady fragrance that fills the kitchen. You'll see the oil starting to glisten on the surface of the paste.
- Build the Sauce: Pour in the chopped tomatoes and add the sugar. Stir well, scraping any browned bits from the bottom of the pan. Notes
For a milder dish, reduce or omit the green chillies. Marinating the chicken overnight yields the best flavor. You can substitute the single cream with coconut cream for a dairy-free version.
