Ingredients
  

  • 500 g fresh green beans trimmed
  • 2 tablespoons extra virgin olive oil
  • 40 g Parmesan cheese freshly grated
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper freshly ground

Method
 

  1. Preheat Your Oven: Start by preheating your oven to 200°C (180°C fan). Line a large baking tray with parchment paper for easy clean-up.
  2. Prepare the Beans: Wash the green beans and pat them completely dry with a clean tea towel or paper towels. This step is crucial for getting them to roast properly. Trim the stem ends off.
  3. Season the Beans: In a large mixing bowl, add the trimmed green beans. Drizzle with the extra virgin olive oil and sprinkle over the garlic powder, onion powder, salt, and black pepper.
  4. Toss to Coat: Use your hands or a pair of tongs to toss everything together until the green beans are evenly coated in the oil and seasonings.
  5. Arrange on the Tray: Spread the seasoned beans in a single, even layer on your prepared baking tray. What works best for me is ensuring they have a bit of space between them. If they're piled up, they will steam.
  6. First Roast: Place the tray in the preheated oven and roast for 10-12 minutes, or until the beans are starting to become tender-crisp.
  7. Add the Parmesan: Carefully remove the tray from the oven. Sprinkle the freshly grated Parmesan cheese evenly over the hot green beans.
  8. Final Roast: Return the tray to the oven and continue to roast for another 5-8 minutes. You're looking for the cheese to be completely melted, golden brown, and bubbling in places. Keep a close eye on it during this stage to prevent it from burning.
  9. Serve Immediately: Remove from the oven and serve straight away while the cheese is gloriously melty and crisp.

Notes

Best served immediately while the cheese is hot and crispy. For leftovers, reheat in an oven or air fryer to regain crispness.
