Ingredients
  

  • 400 g beef mince preferably 15-20% fat for flavour
  • 1 tablespoon olive oil
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon chilli powder adjust to taste
  • 400 g can chopped tomatoes
  • 400 g can black beans drained and rinsed
  • 250 ml beef stock
  • Salt and black pepper to taste
  • Juice of 1 lime

Method
 

  1. Brown the beef: Heat the olive oil in a large frying pan over a medium-high heat. Add the beef mince and break it up with a wooden spoon. Let it sit undisturbed for 2-3 minutes until the underside is a deep, caramelised brown. Stir and continue cooking until all the meat is evenly browned and no pink remains — you'll hear a satisfying sizzle.
  2. Sweat the aromatics: Reduce the heat to medium. Add the diced onion and cook for 4-5 minutes until it turns translucent and soft, releasing a sweet, fragrant smell. Stir in the garlic and both bell peppers, and cook for another 3 minutes until the peppers begin to soften and their edges catch a little colour.
  3. Bloom the spices: Sprinkle over the cumin, smoked paprika, oregano, and chilli powder. Stir constantly for about 1 minute — the aroma will become heady and warm, and the spices will coat the meat and vegetables evenly.
  4. Simmer the filling: Pour in the chopped tomatoes and beef stock, scraping the bottom of the pan with your wooden spoon to lift up any browned bits. Add the drained black beans. Bring to a gentle simmer — you'll see small bubbles breaking the surface. Reduce the heat to low and let it cook uncovered for 20-25 minutes, stirring occasionally, until the sauce has thickened and the mixture is glossy and rich.
  5. Finish with lime: Squeeze in the lime juice, stir, and taste. Adjust salt and pepper as needed. The filling should be deeply savoury with a bright, tangy finish. Remove from the heat and let it rest for 5 minutes while you prepare the bowl components.
  6. Assemble your bowl: Start with a base of cooked rice (white, brown, or cauliflower rice). Spoon a generous portion of the beef and bean mixture over the top. Add your chosen toppings — I like diced avocado, a spoonful of sour cream or Greek yoghurt, fresh coriander, sliced radishes, and a handful of shredded lettuce or baby spinach.
  7. Serve immediately: The contrast of warm, spiced beef against cool, creamy avocado and crisp vegetables is what makes this bowl so satisfying. The colours should be vibrant — red, green, white, and black all in one dish.

Notes

For best flavor, use beef mince with 15-20% fat. Adjust chili powder to your spice preference. Serve with rice and your favorite toppings like avocado, sour cream, and fresh herbs.
